The holidays

Fell off the wagon, shin splints two weeks ago now that still bug me, and I loathe journaling. Since I still can't run I wanted to start up 30 day shred - however during his nap today my shins were hurting. So hopefully tomorrow.

Even with thanksgiving my weight is holding, hopefully it'll drop now!

3 Week Mini Challenge - Day 2

Frustrated. Today was supposed to be a relax, get things done day. Instead Boi is spending his vacation day at work.

Took all my vitamins, did not do anything this morning due to grumpiness.

Did a DVD this evening, focusing on arms and abs. Peanut pooped twice during it :/

B: Eggs

D: rotisserie chicken and cheese curds

Snack: half a banana, Half a Coke and a mini Krackel, juice and water, two plums, peanuts

3 Week motivating Mini Challenge

Do some activity and journal what I eat every day! Today I was at Week 4 Day 1 in my C25K. I was going to give it myself an extra day to rest my legs, however my plans this morning kinda crashed so I decided to just go all out and get my folks to watch him so I could do something real. It went pretty well, the first 5 minute split was not so good, but the rest was good. Set new pace/speed records on runkeeper to boot.

Took all my vitamins and did my morning stretching.

Breakfast: 3 eggs and a piece of toast
Lunch: Black bean cheeseburger
Early Dinner: Indian chicken, vegetables and rice, milk
Late Dinner: Mushroom and Leek Galette
Snacks: Tiny Krackel bar, a nibble of apple pie, juice and sparkling water, handful of raisins, half of Peanut's banana.

That should be it for the day. Tomorrow Boi is off so it'll be a bit easier to exercise. Weight is not good at the moment, but yesterday was bad. Still have 3 more days to correct the bad!

Day off

I'm taking today off. I didn't sleep well last night and my last Jog my legs felt very fatigued. Since I'm starting up with three minute jogs here next I'm going to give my legs a break. Hopefully I can manage a workout DVD or something to work out with a little less impact.

Weigh in was yesterday, I lost 2 1/2 pounds. I can be happy with that. I was hoping to lose more, but due to something happening in my life right now I can't really ask for much more. Hopefully. My husband will get out early today and take the baby off my hands, that way I can focus a little bit more on me. It's really hard on these tough days with little sleep to do more then keep him happy. But I was bad today, going out to Arby's sandwich and Diet Coke. Mainly for the coke.

The rice and the Mac and cheese mentioned last time were both ok. I think I could boost them both a bit next time. It was supposed roasted red pepper and spinach calzones tonight, but I forgot to take the bread dough out of the freezer this morning. So I guess that will be tomorrow... No idea about tonight. I guess I'll just wing it.

Here's me running the other day! I look thrilled.

90 second jogs

Second workout today with 90 second jogs, 2 minute walk reps. First one was GREAT! The middle was meh. Last two SUCKED! I even had it perfect, so I didn't have to jog uphill at all. Hopefully Sunday is better so I feel good about switching to 3 minute jogs. Just go through the pain, right? It's not 'stop' pain, it's 'holy shit I'm out of shape' pain.

I did a lot of stretching this morning, but the rest was kind of a wash. Hopefully Peanut and I can find a good groove tomorrow. Made healthy homemade broccoli and cheese calzones tonight. They were ok, a bit dry/boring, but I got a little bit of spaghetti sauce to lightly dip it in, and that did the trick. The menu for the future: Cuban black beans and rice, and lightened up baked macaroni and cheese. We'll see if they go in my winners folder or not.

So far the scale looks good ;) Official weigh in Monday.

Day 3

3 days in. I have been pretty good, and have been working out fairly regularly. My workout yesterday got a little bit goofed but on the whole it was really great. Today I tried to do some stuff but Peanut woke up from his nap before I was ready for him. And then I sandwich I probably didn't need to. But that's life, and most days will be perfect. Slow and steady. I have already lost 2 pounds, though I know that water weight fluctuates. However I am hoping for a strong first week, and then the rest of the week's can be 1 to 2 pound losses.

On the food side today I made red lentil soup with a spicy sizzle. It was pretty good and better than the last time. Also much more filling. Well it felt more filling despite the fact that I ate a sandwich. So that will be more dinner tonight along with a sweet potato. Tomorrow perhaps a broccoli calzone.

First day of competition

Well, today I'm starting a 4 month long competition with some of my friends. My goal is to lose 15% in that time, and 23% overall. I'm 182 today, I've been good about working out the last few weeks, I just have to stop overeating. Drink lots of water, and ignore my husband's snacks. And play a lot with my Peanut! Just checking in quick today, ciao!


Update: just finished the 1.4 mile lap to the library. New books for Peanut!

Back in the Swing of Things - Healthy Living Day 1

So I've done more recipes from her book, I just have neglected to blog about them. Sad :( Most of them are delicious though! But I want to become more accountable, so here I try again with blogging.

Starting to step down on the eating like crap and moving around more. Day 1 and 2 were slow. But they weren't bad. I can keep improving off of them. Today I also discovered jalapeno jelly, so really, what were my chances?

Tomorrow I deal with Mom's birthday, which will likely not be great food wise, but there should be plenty of walking. So I'll take it!

Recipe #3 - Roasted Red Pepper and Goat Cheese Sandwhiches

I failed to get better pictures of this. But it was pretty damn delicious. Basically it's marinated roasted red peppers, goat cheese, basil, red onion. On tasty bread. For the peppers, I'm not sure what went wrong. I've roasted peppers before. I don't remember doing it a whole lot different then what she did (in the oven) but for whatever reason... I had a hell of a time getting the skin off the peppers. But once it was done it was done, and it was marinating. Then Boi couldn't find any fresh basil *sigh* so I tried it too ways, one with some fresh parsley and dried basil, and then the next day my mom brought over some basil paste she found in the store. I enjoyed it both ways, though I'm sure it would have been best with basil leaves (I love basil leaves). She also called for ciabatta bread, and it's something I always wanted to try making, but lack of time and lack of finding some in the store, we used a loaf of artisan bread instead. Thick bread seemed important, because of the ooey gooey nature of the peppers.

All in all it was quite tasty. If I find myself with goat cheese again for something else, I'd likely recreate it. The peppers were delish as well. I give it 4 nom nom noms out of 5, down one because of the price of goat cheese. Oh and next time, unless I have a great pepper crop, I'm going to give marinating jarred roasted red peppers a try instead.

Recipe #2 - Dip!

I wish I had gotten another picture, but with everything that went on last weekend, it just didn't happen. Everyone who commented on it said they liked it, so I guess it was a hit! The cream cheese really seemed to ring through, and the bits of shallots were yummy. It wasn't my favorite dip ever, it's hard to get me away from my love of ranch, but I liked it better then say a dill dip that often comes with vegetable trays. A lot better. I pretty much demolished the cauliflower with it. Yummy yum yum.

Not a very long post, but this is a delayed post because things were too hectic until now. Plus it was just a mix together thing, nothing too interesting. It's still hectic, but at the very least at the moment I have a babysitter. So I'm taking just enough time to catch up on things while I start getting ready to do some work.

Recipe #1 - Fresh Whiskey Sours!

So. After thinking about it for awhile, I realized that Boi does enjoy whiskey. So I had him pick some up after all, Jack Daniels as Ina prescribes. I tried a shot last night - not bad, not my favorite thing ever but not bad. Gma, Peanut and I went to town today to decorate some pottery, and while we were out I picked up some lemons and limes for our drinks. After we got home, I made up a cup+ of simple syrup and put it in the fridge to chill. Ate dinner - just spaghetti leftovers. Boi got home and I fed him more spaghetti. As Boi started winding Peanut down for the night, me and my "juicer" (aka a vice grip since I lack a real citrus juicer) squeezed the citrus to death. I was a tiny bit short on the juice, but I figured then I'd just pour the rest of the stuff light. Bathtime and bedtime, he was quickly out.

I poured everything together with some ice in a shaker, mine's missing the cap part so I stuck my hand over it and gave it a few shakes. Poured out two glasses, mmm. We both agreed it was sour and fresh. But very light on the whiskey. Personally if I'm going to go to that much trouble making a drink, I want it to give me a decent hit. There's really only enough for one more drink left, so I'm going to split it between us and spike it a bit more (maybe add a bit more syrup to mine) BRB!

Ok, definitely stronger this time. But not overpoweringly so. So my verdict? I'd drink it again. And as I'm sipping my way through drink two, it may just give me the willpower to post this on my Facebook. Enjoy facebooks, tomorrow I make a dip for the start of trivia!

My Very Own Julie & Julia

I've always wanted to do a Julie & Julia. That is, cook through a cookbook. No matter how hard the recipe is, whether or not it looks like you'll enjoy it, just cook through it. Learn lot's of things, taste new things you wouldn't otherwise try, this excites me to no end. So I've decided to dive in and do it. The Joy of Cooking is waaaaay out of my price range, and it isn't vegetarian friendly. So instead, I picked a cookbook that I got at a garage sale a few years ago: Barefoot Contessa at Home. It's fairly vegetarian friendly, though since it isn't completely meat free I will skip around. Meat recipes when it's just me or me and a guest, and the rest when I'm cooking for Boi. Aside from that, I'm going to march from front to end. I was just going to report back some of my cooking loving friends about it, but they wanted me to blog about it as well. So... here I go then!

Alas, the first recipe is a whiskey recipe and we don't have whiskey. We're not whiskey drinkers, and I'm not seeing any other recipes in the book that use it, which would convince me to buy something I fear I might not have again. I think my dad might, or I might be able to convince my friend K to bring some with her this weekend. This seems like an adequate compromise. To go with it, she has an herb dip, which places much emphasis on good mayonnaise. I'm not sure if her intent is for me to make my own or to just not buy a crappy brand. Ah well, we'll see what happens.
